Individual Maple Pecan Pumpkin Pie Tarts - Grain-free, Vegan

These individual Maple Pecan Pumpkin Pie Tarts are the perfect size for each of your Thanksgiving guests, yet they're bursting with flavor thanks to the pecan crust, maple glaze and perfectly-spiced pumpkin pie filling! Since they are gluten-free, grain-free, egg-free and dairy-free (vegan), they can be enjoyed by just about all of your guests, even those with food allergies. Get out your muffin pan and give these a try!

I love pumpkin pie. Like, really love pumpkin pie. Forget the turkey, pumpkin pie is the Thanksgiving food I look forward to the most!
However, it has not always been a love affair with pumpkin pie. When my kids were babies and their sensitive little tummies required me to follow a restrictive diet, I found my beloved pumpkin pie on the chopping block. Gluten-free crust was easy enough, but pumpkin pie is a custard, after all, and I couldn't eat eggs! I also couldn't eat dairy while I was nursing, and the thought of pumpkin pie without a huge glob of whipped cream was...upsetting. I might as well skip the pumpkin pie completely! Yet, pumpkin pie is only on the menu (or should I say, accepted as part of the menu) once a year. So what's a girl to do?
Figure out a recipe for an egg-free pumpkin pie with a yummy maple glaze, that's what a girl should do! And figure it out, I did.

Healthy & Easy Peanut Butter Chocolate Chip Cookies - Paleo, Vegan, Grain-free

These Peanut Butter Chocolate Chip cookies are perfect for a peanut butter cookie craving! With only five ingredients and in 20 minutes, you could be devouring soft and chewy cookies that are gluten-free, grain-free, egg-free, Paleo and vegan!

Sometimes I just need a cookie, a cookie that I don't have to feel guilty about eating and can make quickly. You know those days. For me it's a comfort thing, so today I'm going to share a recipe for seriously comforting Peanut Butter Chocolate Chip Cookies. They're savory and sweet and about as good for you as cookies can be, plus they're gluten- and grain-free, dairy-free, egg-free, Paleo and vegan!A variation of this recipe is popular on Pinterest, but it contains egg. I wanted to see if I could make Peanut Butter Chocolate Chip Cookies that were vegan and friendly to those with egg allergies, so I tried the recipe with a "flax egg" instead. It worked! Even without the egg, these cookies are perfectly thick, soft and chewy.Including the flax egg, these cookies only require five ingredients. They are so simple to make that a batch can be whipped up and out of the oven in less time than it would take you to run to the store - about 20 minutes, to be exact! Health Benefits & Nutrition FactsWhen I said that these cookies are about as good for you as a cookie can be, I meant it. The peanut butter provides about 4 grams of protein per cookie, and according to the World's Healthiest Foods, peanuts are loaded with a lot of other nutrients:

Peanuts are nutrient dense. They contain the minerals copper and manganese as well as vitamins E, B3, biotin and folate.

Peanuts contain the same heart-healthy monounsaturated fat found in olive oil, oleic acid.

Peanuts are a rich source of antioxidants! Peanuts contain more antioxidants than some fruits, one of the antioxidants being resveratrol, the same antioxidant in red wine.

I minimized the sugar in these cookies as much as possible because I wanted to let the health benefits shine through. While some of the egg-containing recipes called for a full cup of sugar, I only used 1/2 cup of sugar. If you prefer your sweets to be really sweet, you could add more sugar. However, I like the savory and sweet combination! I also like that using only 1/2 cup of sugar in the recipe equates to only about a teaspoon of sugar per cookie (about 5 grams, 8 grams if you count the chocolate chips).

Tips & Tricks:

To make these cookies, I use organic peanut butter from Costco (see my post 30 Organic Pantry Essentials to Buy at Costco). The ingredients are clean and simple - dry roasted peanuts and sea salt - yet it is reasonably priced at around $5 per 28 ounce jar.

Sunspire 42% Cacao Semi-Sweet Chocolate Chips keeps these cookies vegan because they are dairy- and gluten-free. I purchase mine at Natural Grocers, but you can also get them on Amazon.

Easy Peanut Butter Chocolate Chip CookiesGluten-free | Grain-free | Dairy-free | Egg-free | Vegan | PaleoPrep Time: 12 minutesCook Time: 8 minutesTotal Time: 20 minutesMakes about 18 cookies
Ingredients:
- 1 Tbsp ground flaxeed + ¼ cup water - 1 cup peanut butter, creamy - ½ cup sucanat or coconut sugar (for Paleo version) - 1 tsp baking soda - 1 cup semi-sweet chocolate chips Directions:
Preheat oven to 350 degrees. In a large bowl, mix the ground flaxseed and water together. Set aside and let sit for about 5 minutes. While you wait, line your cookie sheets with parchment paper. Add the peanut butter, sugar and baking soda to the flax egg and mix together until smooth using a sturdy spoon. Fold in the chocolate chips. Use about 2 tablespoons of dough and roll into a ball. Place on the cookie sheet about two inches apart. Bake at 350 degrees for 8 minutes. Let the cookies cool a few minutes before devouring. Enjoy!

Individual Microwave Chocolate Raspberry Cake - Flourless, Sugar-free, Low-Carb, Vegan

This is the perfect treat! Healthy, decadent, easy, and friendly to special diets. GF, sugar-free, Paleo, Primal, vegan, flourless.

Everyone deserves a treat occasionally, but it's often difficult to find treats that are compatible with special diets. That's why I love this Microwave Chocolate Raspberry Cake. It's friendly to all manner of special diets because it's gluten-free, grain-free, vegan, Paleo, Primal, low-carb, and sugar-free. In short, this recipe can be enjoyed by almost everyone! But this Microwave Chocolate Raspberry Cake can also be made in just five minutes, so you can satisfy your craving as soon as it strikes. No need to eat junk food or wait for those cookies to finish baking. Make this individual Microwave Chocolate Raspberry Cake instead! What's better than a treat that is friendly to special diets and can be made in five minutes? A treat that's good for you! That's right, this Microwave Chocolate Raspberry Cake is also good for you. Well-Being Secrets and The World's Healthiest Foods both provide information on the health benefits of the ingredients:

According to Well-Being Secrets, flaxseed combines fiber, protein and healthy omega-3 fats in a superfood that has been studied for supporting weight loss, healthy cholesterol levels and stable blood sugar. Research also shows that flaxseed may help fight heart disease and cancer.

Coconut flour is very high in fiber and low in carbohydrates, which promotes satiety and stable blood sugar levels and can aid in weight loss.

Cocoa powder comes from the same cacao plant used to make cocoa butter for chocolate. It is rich in magnesium and antioxidants, and research shows that chocolate may help support healthy blood pressure (more info here).

Raspberries are rich in fiber and have less sugar than most other fruits, making raspberries a good choice for stable blood sugar levels and weight loss. Raspberries are also extremely rich in antioxidants and anti-inflammatory compounds. Researchers have studied raspberries for everything from fighting cancer to promoting weight loss. Click here for more info.

All of these ingredients come together to make a decadent treat that is healthy, satisfying and sugar-free, and can be made in only five minutes!

This decadent and healthy treat can be made in just 5 minutes!

The raspberries make this chocolate cake really special. I use thawed, frozen organic raspberries because when they thaw, the raspberries release their juice. When this juice is poured over the cake, it gives the cake a fudgey-texture reminiscent of a flourless torte. It also marries the raspberry and chocolate flavors beautifully, all without any sugar! Here are a few tips to help you make this amazing little chocolate dream affordable:

I buy my cocoa powder at Costco when they have it and at Natural Grocers when they don't. Make sure you buy organic baking cocoa, since cocoa powder that is not organic can contain traces of lead and other contaminants (according to The World's Healthiest Foods). Worst case scenario, Amazon sells several varieties of organic cocoa powder.

I buy my coconut flour at Natural Grocers because they have the best price on coconut flour that I've found. You can buy a large bag of their brand of coconut flour for far less than what you will pay for Bob's Red Mill.

Organic frozen raspberries can be found at Natural Grocers, but Whole Food's 365 brand is also reasonable. Other standard grocers are starting to sell organic frozen fruits for a reasonable price, so explore the options near you. Just be sure to buy organic frozen raspberries, since research has shown that organic raspberries have far more antioxidants than non-organic raspberries (source).

Perfect Double Chocolate Chip Pumpkin Seed Cookies - Grain-free, Nut-free, Vegan & Paleo

This recipe has been updated to use cassava flour, which means these Double Chocolate Chip Pumpkin Seed Cookies are now grain-free! They can also now be Paleo-friendly when made with Paleo chocolate chips. Enjoy!

These Double Chocolate Chip Pumpkin Seed Cookies are so decadent, soft and chewy that you would never guess they're gluten-free, nut-free, soy-free and vegan! Thanks to pumpkin seeds and cassava flour, they're also grain-free and extra nutritious. Use Paleo chocolate chips for the best Paleo Double Chocolate Chip Cookies ever!

I can no longer eat most double chocolate chip cookies. Seriously, these cookies are so good that every other double chocolate chip cookie tastes bland to me! Every person that I've shared these with seems to agree. This recipe has been anticipated by many because these cookies are so good! Oh, and not only are they perfectly soft and chewy and packed with chocolate flavor, they are gluten-free, nut-free, soy-free, vegan, and have far more nutrients, antioxidants and fiber than most cookies. Pumpkin seeds are so nutrient dense that they have been dubbed a "superfood", so with ground pumpkin seeds taking the place of most of the flour, these cookies just might be perfect!
